Lack of Good Restaurants Improves Your Cooking
Since I’ve been in Ecuador, there hasn’t been any good burgers. I’ve been forced to learn to make good burgers. My dad does most of the work to be honest, but I still cook them.
We’ve had to cook the burgers in a pizza oven which is super hard because there is no airflow. The charcoals take forever to get going.
The cool thing is where we get our meat, they literally grind the meat right then and there when we ask for it.
Another thing we’ve learned, is that the meat in Ecuador has substantially less fat than the meat we buy at Costco in the States. Which actually makes it harder to cook to perfection. The avocados are amazing here though.

For more burger joy, add a slice of cheddar cheese on top of the patties after they have been removed from the grill! The cheese will melt real nice.
